This has been such an interesting and new journey for me. I enjoy making healthy food, I enjoy learning about the different health benefit of different foods. I love rice…a lot!!Yet I know white rice is not the most healthy for me. So I had to start making changes to my daily meals. I substituted white rice with quinoa, spelt and kamut. These grains are such a great alternative. Kamut is extremely filling and has a chewy texture when cooked. As I keep working on this blog I hope to explain to you the benefits of the foods I choose to eat. I know it took me a while to undertsand it all. Ihope to make it easy for you to understand why certain food choices may be a better option for your body and health. Here is the butternut squash recipe. You can try using kamut or any choice of grain you prefer.
2 cups of cooked kamut
2 cups diced butternut squash
1/2 cup red onion
2tbs of Extra Virgin Olive Oil
3 cups of kale chopped
Salt to taste
Place the butternut squash on a sheet of pan and drizzle with Extra Virgin Olive Oil and a pinch of salt. Bake in the oven for 15-20 mins or until fork and tender. Remove the oven and let it cool.
Add chopped Kale i a bowl and drizzle 1 Tbs extra virgin olive oil, lemion and salt. Massage the kale for one minute.
Add the remainder of ingredients like the cooked kamut and onion in the bowl and mix well. Squeeze on your desired amount of lemon and add salt. Simple yet filling.
